On Classic Christmas Dishes and Delicious Fondue Sauces

Here’s the big question… What do you serve at Christmas at your house? In Austria, apparently that’s mainly sausages and fish. Specifically, in Salzburg, it’s the traditional sausage soup that’s usually served on Christmas Eve, made with minced pork mettwurst or, in the classic version, with hot dog sausages. In Kärnten, people like to eat sausage with cabbage or sauerkraut. In Lower and Upper Austria, fried carp is still a prominent tradition, in Burgenland, it’s fried carp, goose or smoked salmon. The classic “Ländle” Christmas Eve dishes are fresh veal sausage with sauerkraut and Italian salad. In the Tyrol, no preference is recorded, but mostly, people eat game, fish or other types of meat. At my house, we like meat fondue for Christmas. And here come some of my Grandma’s most delicious recipes for fondue sauces – hers was the best in town.

On traditional Christmas dinners and divine fondue dips

In Salzburg it’s the traditional Würstelsuppe, a soup made of Mettwurst or, for the classic version, of Vienna Sausages prepared to be eaten on Christmas Eve. In Carinthia, it’s sausage with cabbage. In Lower and Upper Austria the fried carp is traditionally eaten and in Burgenland it’s either that or goose or even smoked salmon. In the Ländle on Christmas Eve, it’s the traditional veal sausages with sauerkraut and an Italian salad. In the Tyrol, people don’t have a go-to dish and might eat anything from game to fish or other types of meat. In my house, we always eat a meaty fondue. Here are a few of my Granny’s fondue dip recipes – hands down “the best in town”.

Fish Cookery Class at Babette’s

Do you know Babette’s on Schleifmühlgasse in Vienna’s 4th district? If not, then it’s high time you do. It’s a store where veritable culinary treasures are sold by the lovely Nathalie, the store’s owner. She probably sells all the cookbooks that have ever let our hearts beat faster. And – you can sign up to various cookery classes as well.  I chose the seasonal fish dish cookery course, as cooking fish isn’t as common in these parts as cooking meat. I always wanted to know how to fillet and debone fish and the prospect of wowing my guests with extraordinary fish recipes on a regular basis very much appealed. So I went. Red Lentils meet Cabbage, Dates, Apple, Cinnamon, Hazelnut and Rocket

Dates, apple, hazelnut, cinnamon, rocket… this dish is predestined to be divine. How else but by divine provenance would a combination of ingredients like this one come to be? As a matter of fact, this recipe doesn’t just sound good, it tastes absolutely delicious. I have discovered my favourite dish this winter, at any rate, and have already cooked it twice this week (and it’s only Wednesday morning). Apples, dates, hazelnuts and cinnamon are ideal comfort foods for the wintertime in general and Christmas in particular. And they’re a match made in heaven with red lentils and cabbage. On Oranges, Vitamin C and a Delicious Orange and Almond Cake Recipe

It’s the same deal every year: as the outside temperatures decrease, the pre-Christmas stress increases and of course – hello to the runny nose! My own personal immune system boost is ginger – daily. although in the mornings, a glass of freshly squeezed orange juice might be more to your taste – I’m currently having one of those every day as well. It’s common knowledge that oranges are full of vitamin C and strengthen our immune system, but today, I’ll tell you much more about the most popular of vitamins as well as about our favourite orange citrus fruit…

Homemade Ravioli

If there’s one thing I really miss in my little gluten-free world, it’s ravioli. I loved them more than anything before I was diagnosed, bought them almost every week at our local market in Dornbirn and blissfully enjoyed them at home. Unfortunately, gluten-free ravioli aren’t really available anywhere. And making them yourself is a culinary highlight, but also extremely time-consuming, so not something you’d do every day. So last summer, I organised a gluten-free ravioli session with my friend Johanna, who is also coeliac, like me. And here’s the result…
